Ingredients
  

For the Shortbread Crust
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1/4 tsp salt
For the Mango Curd
  • 2 ripe mangoes, pureed Make sure they are ripe for best flavor.
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup fresh lime juice Adjust according to taste.
  • 1/4 tsp baking powder
  • Raspberry puree for swirling To add a pop of color and flavor.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease an 8x8 inch baking dish.
  2. In a bowl, combine the flour, softened butter, powdered sugar, and salt to form the shortbread crust. Press the mixture into the bottom of the prepared baking dish.
  3. Bake for 15-20 minutes until lightly golden.
Making the Mango Curd
  1. Meanwhile, prepare the mango curd: In a bowl, whisk together the mango puree, granulated sugar, eggs, lime juice, and baking powder until smooth.
  2. Pour the mango mixture over the baked crust.
  3. Drizzle raspberry puree on top and use a knife to create swirls.
  4. Bake for an additional 25-30 minutes until the curd is set.
  5. Allow to cool before slicing into bars. Serve chilled or at room temperature.

Notes

Mango Curd Bars can be served with whipped cream or ice cream for an extra treat. Store in an airtight container in the refrigerator for about a week or freeze individually wrapped bars for longer storage.
