Meatloaf Layer
  • 1.5 lb Ground beef lean
  • 1 small Onion finely chopped
  • 2 Garlic cloves minced
  • 1 large Egg
  • 0.75 cup Breadcrumbs
  • 0.5 cup Milk
  • 0.33 cup Ketchup
  • 1 tbsp Worcestershire-style sauce alcohol-free
  • 1 tsp Salt
  • 0.5 tsp Black pepper
Mac and Cheese Layer
  • 3 cups Elbow macaroni uncooked
  • 3 tbsp Butter
  • 3 tbsp All-purpose flour
  • 2.5 cups Milk
  • 2 cups Cheddar cheese shredded
  • 1 cup Mozzarella or Colby Jack cheese shredded

Method
 

Instructions
  1. Preheat the oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
  2. In a large bowl, mix all meatloaf ingredients until just combined. Press evenly into the baking dish and bake for 20–25 minutes.
  3. Cook the macaroni in salted boiling water until al dente. Drain and set aside.
  4. In a saucepan, melt butter, whisk in flour, then slowly add milk. Cook until thickened and stir in cheeses until smooth.
  5. Combine macaroni with cheese sauce, spread over the meatloaf layer, and bake for another 20–25 minutes until bubbly.

Notes

Let the casserole rest for 10 minutes before slicing for cleaner portions. Ground turkey or chicken can be used as a lighter alternative.
