- In a large pot, heat the sesame oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
- Add the sliced carrot and cook for a few minutes until slightly softened.
- Pour in the vegetable broth and bring to a boil.
- Add the bean sprouts and soy sauce. Cook for another 3-5 minutes until the bean sprouts are tender.
- Season with salt and pepper to taste.
Serving
- Ladle the soup into bowls and top with freshly chopped green onions.
- Enjoy the soup on its own or pair it with whole-grain bread for a complete meal.
Notes
Make sure to not overcook the bean sprouts. Feel free to add more vegetables like bell peppers or mushrooms for extra nutrients and flavor. To make it spicier, add red pepper flakes or hot sauce.
