Ingredients
  

For the cake
  • 1 box lemon cake mix
  • 1 cup lemonade
  • 1/2 cup vegetable oil
  • 3 large eggs At room temperature for better mixing
For the icing
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice Can use another citrus juice as a substitute
  • 1 whole zest of lemon Add more for a stronger lemon flavor

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour a cake pan.
  3. In a large bowl, combine the lemon cake mix, lemonade, vegetable oil, and eggs. Mix until smooth.
  4. Pour the batter into the prepared pan.
Baking
  1. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let the cake cool.
Icing
  1. In a separate bowl, mix the powdered sugar, lemon juice, and lemon zest to make the icing.
  2. Drizzle the icing over the cooled cake before serving.

Notes

Store any leftover Lemonade Cake in an airtight container at room temperature for up to three days. If refrigerated, it can last up to a week. For longer storage, freeze it for up to three months, ensuring it's wrapped well.
