  • 1 cup sourdough discard
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1 whole lemon, zest For maximum flavor, use fresh lemons.
  • 1 whole lemon, juice
  • Powdered sugar for glaze Use as needed for glaze.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large mixing bowl, cream together the softened butter and sugar until fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in the sourdough discard, lemon zest, and lemon juice until combined.
  5. In another bowl, whisk together the flour, baking soda, baking powder, and salt.
  6. Alternately add the dry ingredients and buttermilk to the wet mixture, starting and ending with flour, mixing until smooth.
  7. Pour the batter into the prepared cake pan and smooth the top.
Baking
  1. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow the cake to cool.
Glazing
  1. For the glaze, mix powdered sugar with lemon juice until smooth and pour over the cooled cake.

Notes

Serve at room temperature or slightly chilled. Suggestions for topping include fresh berries or whipped cream.
