Dough Ingredients
  • 2 3/4 cups all-purpose flour
  • 1/4 cup sugar
  • 1 packet instant yeast (2 1/4 tsp)
  • 1/2 tsp salt
  • 1/2 cup milk warmed
  • 1/4 cup water warmed
  • 1/4 cup unsalted butter warmed
  • 1 large egg
  • 1 cup fresh blueberries
  • Zest of 1 lemon
  • 1/4 cup lemon juice
Glaze Ingredients
  • 1 cup powdered sugar
  • 1/4 cup lemon juice

Method
 

Preparation
  1. In a large bowl, combine flour, sugar, yeast, and salt.
  2. In a small saucepan, heat milk, water, and butter until warm.
  3. Pour this mixture into the dry ingredients and mix until blended.
  4. Add the egg, blueberries, and lemon zest. Knead the dough for 5-10 minutes.
First Rise
  1. Let the dough rise in a warm place until it has doubled in size, about 1 hour.
Shaping the Rolls
  1. Roll out the dough into a rectangle.
  2. Spread lemon juice over it, sprinkle with sugar and additional blueberries.
  3. Roll the dough tightly and cut it into rolls.
Second Rise
  1. Place the rolls in a greased baking dish and let them rise again for 30 minutes.
Baking
  1. Preheat your oven to 350°F (175°C) and bake the rolls for 20-25 minutes until they are golden brown.
Glazing
  1. Mix the powdered sugar and lemon juice to make a glaze.
  2. Drizzle this over the warm rolls before serving.

Notes

Serve warm, can be enjoyed plain or with additional glaze. Store in an airtight container at room temperature for up to 2 days or refrigerate for up to a week. Freeze wrapped tightly for longer storage.
