Ingredients
  

Shortbread Crust
  • 1 cup All-purpose flour
  • 1/4 cup Granulated sugar
  • 1/2 cup Unsalted butter, melted
Lemon Blueberry Filling
  • 1 cup Granulated sugar
  • 1/4 cup All-purpose flour
  • 2 pcs Large eggs
  • 1/2 cup Fresh lemon juice
  • 1 tbsp Lemon zest
  • 1 cup Blueberries fresh or frozen

Method
 

Instructions
  1. Preheat oven to 350°F (175°C) and line an 8x8-inch pan with parchment paper.
  2. Mix flour, sugar, and melted butter. Press evenly into the pan and bake for 15–18 minutes until lightly golden.
  3. Whisk sugar and flour, then add eggs, lemon juice, and zest until smooth. Fold in blueberries.
  4. Pour filling over warm crust and bake for 22–28 minutes until set.
  5. Cool completely, refrigerate for at least 1 hour, dust with powdered sugar, and slice into bars.

Notes

For best results, chill the bars before slicing. Fresh lemon juice gives the brightest flavor. Store refrigerated up to 5 days.
