Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking soda, and salt.
- In a separate bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy.
- Beat in the egg, vanilla extract, key lime juice, and key lime zest until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Drop tablespoons of dough onto the prepared baking sheet.
Baking
- Bake for 10-12 minutes until the edges are golden but the center is still soft.
- Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Glazing
- For the glaze, mix powdered sugar, key lime juice, and key lime zest until smooth.
- Drizzle the glaze over the cooled cookies and let set before serving.
Notes
Use fresh key limes for the best flavor. Don’t overmix the dough after adding dry ingredients. Experiment with the glaze by adding more or less lime juice to your liking.
