  • 120 ml Pineapple juice chilled
  • 60 ml Cream of coconut or coconut cream
  • 30 ml Blue fruit syrup blue raspberry or similar
  • 1 cup Ice cubes
For the Coconut Rim
  • 2 tbsp Shredded coconut sweetened or unsweetened
  • 1 tbsp Pineapple juice or water for rimming the glass

Method
 

Instructions
  1. Pour pineapple juice or water onto a small plate. Dip the rim of the glass into the liquid, then coat with shredded coconut. Set aside.
  2. Add pineapple juice, cream of coconut, blue fruit syrup, and ice cubes to a blender.
  3. Blend until smooth and slushy with a thick frozen texture.
  4. Pour into the prepared glass and garnish with pineapple or cherry if desired. Serve immediately.

Notes

For a lighter version, use light coconut milk and reduce the syrup. This recipe is alcohol-free and suitable for all ages.
