Ingredients
  

Honey Lime Chicken
  • 4 Boneless skinless chicken breasts
  • 3 tbsp Honey
  • 2 tbsp Fresh lime juice
  • 2 Garlic cloves, minced
  • 1 tbsp Olive oil
  • Salt and black pepper to taste
Rice Layer
  • 1 cup Jasmine or basmati rice
  • 2 cups Chicken broth or water
Avocado Layer
  • 2 Ripe avocados, diced
  • 0.25 cup Red onion, finely chopped
  • 2 tbsp Fresh cilantro, chopped

Method
 

Instructions
  1. In a bowl, mix honey, lime juice, garlic, olive oil, salt, and pepper. Add chicken and marinate for at least 30 minutes.
  2. Cook rice in chicken broth according to package instructions. Fluff and set aside.
  3. Cook the chicken in a skillet or grill pan over medium heat until fully cooked and golden on both sides. Slice into strips.
  4. In a bowl, gently combine avocado, red onion, and cilantro.
  5. Assemble by layering rice, chicken, and avocado mixture. Serve immediately.

Notes

For best flavor, use fresh lime juice and ripe avocados. Serve immediately to keep the avocado fresh.
