Marinate the Chicken
- In a bowl, whisk together honey, lime juice, lime zest, garlic, soy sauce, olive oil, salt, and pepper.
- Add the chicken breasts to the bowl and marinate for 10–15 minutes.
Cook the Chicken
- Heat a skillet over medium heat.
- Cook the chicken for 5–7 minutes on each side until it is golden and fully cooked.
- Remove the chicken from the skillet and let it rest. Then slice it into strips.
Assemble the Bowl
- Prepare your bowls by adding warm rice as the base.
- Arrange the sliced chicken over the rice.
- Add fresh avocado slices, halved cherry tomatoes, corn, and sliced red onion.
- Top with chopped cilantro, Greek yogurt or sour cream, and chili flakes if desired.
- Serve immediately while warm.
Notes
