  • 1/2 teaspoon cinnamon
  • A pinch salt
Wet Ingredients
  • 1 cup Greek yogurt
  • 1/2 cup milk (or almond milk)
  • 1/4 cup honey or maple syrup Can substitute with natural sweetener like stevia
  • 2 pieces eggs For vegan option, use flax eggs
  • 1 teaspoon vanilla extract
Fruits
  • 1 cup mixed berries (strawberries, blueberries, raspberries) Can use frozen berries, thawed before mixing

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the oats, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together the Greek yogurt, milk, honey, eggs, and vanilla extract.
  4. Combine the wet and dry ingredients.
  5. Fold in the mixed berries gently.
  6. Pour the mixture into a greased baking dish.
Baking
  1. Bake for 25-30 minutes or until set and golden.
  2. Allow to cool slightly before serving.

Notes

Serve warm or cold, topped with Greek yogurt or a drizzle of honey. Store leftovers in an airtight container in the refrigerator for up to three days, or freeze portions for later.
