  • 1.5 cups shredded mozzarella cheese Ensure it's well shredded for mixing
  • 2 oz cream cheese Softened for easy mixing
  • 1 large egg
  • 0.5 tsp salt
  • 0.5 tsp pepper
  • 1 tbsp olive oil For brushing
Fillings (customizable)
  • Your choice of fillings (e.g., pepperoni, vegetables, cheese) Feel free to experiment with various fillings.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix almond flour, shredded mozzarella cheese, cream cheese, egg, salt, and pepper until a dough forms.
  3. Roll out the dough on parchment paper into a circle.
  4. Add your desired fillings on one half of the dough.
  5. Fold the other half over and pinch the edges to seal.
  6. Brush the calzone with olive oil.
Baking
  1. Bake for 20-25 minutes or until golden brown.
  2. Let cool slightly before slicing and serving.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. You can freeze the calzones before baking for up to a month. Bake directly from frozen, adding a few extra minutes to the baking time.
