Preparation
- Preheat your oven to 400°F (200°C).
- Pat the beef tenderloin dry with paper towels and season generously with salt and pepper.
- In a small bowl, mix together the olive oil, rosemary, thyme, and garlic.
- Rub the herb mixture all over the beef tenderloin.
Searing and Roasting
- Heat a large oven-safe skillet over medium-high heat and sear the tenderloin on all sides until browned (about 2-3 minutes per side).
- Transfer the skillet to the preheated oven and roast for about 20-25 minutes for medium-rare, or until it reaches your desired level of doneness.
- Remove from the oven and let the beef rest for 10 minutes before slicing.
Notes
Make sure to let the beef rest after cooking. This helps keep it juicy and tender. You can adjust the herbs based on your taste. Thyme and rosemary are great, but you can also try parsley or sage. Use a meat thermometer to check the doneness. For medium-rare, you’re looking for an internal temperature of about 135°F (57°C).
