Method
 

Preparation
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and cook until it turns translucent.
  3. Stir in the minced garlic and cook for about 1 minute, until fragrant.
Cooking
  1. Add the chopped carrots and celery to the pot. Cook for about 5 minutes until they start to soften.
  2. Pour in the chicken or vegetable broth and add the canned diced tomatoes.
  3. Stir in the dried thyme and bay leaf. Season with salt and pepper to taste.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15-20 minutes.
  5. If using pasta, add the cooked pasta and stir.
  6. Finally, mix in the spinach or kale, and cook just until wilted.

Notes

Use fresh vegetables for better flavor. Adjust the seasoning to your taste; feel free to add more herbs or spices. If you don't want pasta, try adding rice or quinoa instead for a different texture. For a spicy kick, add some red pepper flakes or hot sauce.
