Preparation
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and cook until it turns translucent.
- Stir in the minced garlic and cook for about 1 minute, until fragrant.
Cooking
- Add the chopped carrots and celery to the pot. Cook for about 5 minutes until they start to soften.
- Pour in the chicken or vegetable broth and add the canned diced tomatoes.
- Stir in the dried thyme and bay leaf. Season with salt and pepper to taste.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 15-20 minutes.
- If using pasta, add the cooked pasta and stir.
- Finally, mix in the spinach or kale, and cook just until wilted.
Notes
Use fresh vegetables for better flavor. Adjust the seasoning to your taste; feel free to add more herbs or spices. If you don't want pasta, try adding rice or quinoa instead for a different texture. For a spicy kick, add some red pepper flakes or hot sauce.
