Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat olive oil over medium heat.
  3. Add the onion and garlic, sautéing until softened.
  4. Stir in the ground turkey, cooking until browned.
  5. Add the sweet potatoes, bell pepper, and spices, mixing well.
  6. Pour in a little water if needed, cover, and let it cook until the sweet potatoes are tender, about 10-15 minutes.
  7. Stir in the spinach and cook until wilted.
Baking
  1. Transfer the skillet to the oven and bake for about 20 minutes, until everything is fully cooked.

Notes

You can serve this dish as a main course. For added flavor, top it with avocado or Greek yogurt. Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to 3 months.
