  • 2 medium sweet potatoes, peeled and diced Ensure they are cut into equal-sized pieces for even cooking.
  • 1 medium bell pepper, diced
  • 1 medium onion, diced
  • 2 cups spinach, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat. Add onion and bell pepper, and sauté until softened.
  3. Stir in garlic and ground turkey, cooking until turkey is no longer pink.
  4. Add sweet potatoes, spinach, paprika, cumin, salt, and pepper. Mix well.
  5. Transfer the mixture to a baking dish and bake for 25-30 minutes, or until sweet potatoes are tender.
  6. Serve warm and enjoy!

Notes

You can serve it with a simple side salad or steamed vegetables for a complete meal. Leftovers are great for lunch. To store, let it cool and keep in an airtight container in the fridge for up to 4 days. It can be frozen in portions for up to 3 months. For extra flavor, try adding cheese on top during the last few minutes of baking.
