Preparation
- Preheat the oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium heat. Add onion and bell pepper, and sauté until softened.
- Stir in garlic and ground turkey, cooking until turkey is no longer pink.
- Add sweet potatoes, spinach, paprika, cumin, salt, and pepper. Mix well.
- Transfer the mixture to a baking dish and bake for 25-30 minutes, or until sweet potatoes are tender.
- Serve warm and enjoy!
Notes
You can serve it with a simple side salad or steamed vegetables for a complete meal. Leftovers are great for lunch. To store, let it cool and keep in an airtight container in the fridge for up to 4 days. It can be frozen in portions for up to 3 months. For extra flavor, try adding cheese on top during the last few minutes of baking.
