- Heat olive oil in a large skillet over medium heat.
- Add the onion and garlic, and sauté until softened.
- Add the ground turkey, cooking until browned.
- Stir in the zucchini and bell pepper, cooking until tender.
- Add the diced tomatoes and Italian seasoning, and simmer for 5-7 minutes.
- Season with salt and pepper to taste. Serve warm.
Notes
Serve the skillet warm on its own or over rice or quinoa. Top with cheese or fresh herbs for extra flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for longer storage.
