Preparation
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a mixing bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with milk, until well combined.
Baking
- Pour the batter evenly into the prepared pans.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow cooling in the pans for 10 minutes, then turn out onto wire racks to cool completely.
Frosting and Decoration
- Once cooled, frost with your choice of frosting and decorate as desired for graduation.
Notes
Make sure all your ingredients are at room temperature for better mixing. Don’t overmix the batter; mix just until combined for a light cake. You can add food coloring to the frosting to match the school colors. Let the cake cool completely before frosting to prevent the frosting from melting. Store the cake covered at room temperature for up to three days, or refrigerate for up to a week.
