Method
Preparation
- Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- In another bowl, combine flour, baking powder, and salt. Gradually add this to the creamed mixture, alternating with milk. Mix until just combined.
- Pour the batter evenly into the prepared pans.
Baking
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let cakes cool in the pans for 10 minutes, then remove to wire racks to cool completely.
Decorating
- Once cool, decorate the cake with fondant and any graduation-themed decorations.
Notes
Ensure all ingredients are at room temperature for better mixing. Do not overmix the batter; mix until just combined for a light cake. If using fondant, roll it out on a smooth surface dusted with powdered sugar to prevent sticking. The cake can be stored in an airtight container in the refrigerator for up to 5 days.
