Preparation
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
- In another bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with the flour mixture. Mix until just combined.
- Pour the batter evenly into the prepared pans.
Baking
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool for 10 minutes in the pans before transferring to wire racks to cool completely.
Decoration
- Once cooled, frost with buttercream and decorate with fondant to create a graduation theme.
Notes
Make sure all your ingredients are at room temperature before you start mixing. For a richer flavor, consider using vanilla bean paste instead of vanilla extract. You can also customize your cake by adding food coloring to the batter or frosting to match the graduate's school colors.
