Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the softened goat cheese, chopped walnuts, honey, fresh thyme, and a pinch of salt and pepper. Mix until well combined.
Assembly
- Roll out the puff pastry sheets on a lightly floured surface.
- Cut each sheet into squares, about 3 inches in size.
- Place a spoonful of the goat cheese mixture in the center of each square.
- Fold the corners of the pastry over the filling, squeezing to seal.
- Brush the tops with the beaten egg for a nice golden color.
Baking
- Place the assembled pastry bites on the prepared baking sheet.
- Bake in the preheated oven for about 15-20 minutes, or until they are golden brown and puffed up.
Notes
These pastry bites are best served warm. Store leftovers in an airtight container in the refrigerator for up to 2 days. To reheat, place them in a preheated oven at 350°F (175°C) for about 10 minutes, until heated through. Make sure the puff pastry is fully thawed before using. Feel free to add other herbs or spices for extra flavor. Experiment with different cheeses for variations.
