Preparation
- Line a baking sheet with parchment paper and preheat the oven to 300°F.
- In a large bowl, beat the egg whites until foamy. Gradually add 2 cups of powdered sugar, continue beating until glossy with soft peaks.
- Set aside about 1/2 cup of the mixture for glazing the tops of the cookies.
- Fold together almond flour, remaining 1/2 cup powdered sugar, cinnamon, vanilla extract, lemon zest, and salt into the egg white mixture until sticky dough forms.
- Cover the dough and chill in the refrigerator for 30 minutes.
- Dust a work surface with powdered sugar and roll out the dough to about 1/4 inch thick.
- Use a star-shaped cookie cutter to cut out shapes and place them on the prepared baking sheet.
- Spread the reserved egg white glaze over the top of each star, ensuring edges are visible.
Baking
- Bake the cookies for 12 to 15 minutes, until tops are set and cookies look lightly dry.
- Allow cookies to cool completely before serving or storing.
Notes
Best served at room temperature, these cookies can be enjoyed plain or with tea or coffee. Store in an airtight container for about a week or freeze for up to three months.
