Preparation
  1. In a bowl, whisk together the flour, baking powder, sugar, and salt.
  2. In another bowl, mix the milk, vanilla extract, and eggs until well combined.
  3. Combine the wet and dry ingredients until the batter is smooth.
Frying
  1. Heat oil in a deep fryer or heavy pot to 350°F (175°C).
  2. Pour the batter into a squeeze bottle or piping bag.
  3. Carefully swirl the batter into the hot oil to create funnel cake shapes.
  4. Fry the cakes until they are golden brown, about 1-2 minutes per side.
  5. Remove the cakes from the oil and drain them on paper towels.
  6. Dust with powdered sugar before serving.
