- Heat olive oil in a large skillet over medium heat. Add sliced onions and cook slowly until deeply caramelized, about 15–20 minutes.
- Add ground beef to the skillet and cook until browned, breaking it apart as it cooks.
- Stir in garlic and cook for 30 seconds. Add beef broth, Worcestershire sauce, and thyme. Simmer for 5 minutes.
- Mix cornstarch with water and stir into the skillet. Cook until the sauce thickens.
- Lay provolone slices over the beef mixture, cover briefly until melted, then spoon onto toasted buns and serve.
Notes
For a lighter version, substitute ground beef with ground turkey or mushrooms. Serve immediately for best texture.
