  • 1 cup warm water
  • 1 packet active dry yeast (2 1/4 teaspoons)
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • to taste Fresh rosemary (optional)
  • to taste Coarse sea salt (for topping)

Method
 

Preparation
  1. In a bowl, combine warm water and yeast. Let it sit for about 5 minutes until foamy.
  2. In a mixing bowl, combine flour and salt.
  3. Add the yeast mixture and olive oil to the flour mixture.
  4. Mix until a dough forms, then knead for about 5-10 minutes until smooth.
  5. Place the dough in a greased bowl, cover with a towel, and let rise in a warm place for 1-2 hours or until doubled in size.
  6. Preheat the oven to 425°F (220°C).
Baking
  1. Once risen, shape the dough into a rectangle and place on a greased baking sheet.
  2. Use your fingers to push dimples into the surface of the dough.
  3. Drizzle with olive oil, sprinkle with coarse sea salt and rosemary if desired.
  4. Bake for about 20-25 minutes until golden brown.

Notes

Store leftover focaccia in an airtight container at room temperature for up to 3 days, or wrap tightly and freeze for longer storage. Reheat in the oven until warmed through. Consider different toppings such as garlic, olives, or cheese for additional flavors.
