Preparation
- In a bowl, combine warm water and yeast. Let it sit for about 5 minutes until foamy.
- In a mixing bowl, combine flour and salt.
- Add the yeast mixture and olive oil to the flour mixture.

- Place the dough in a greased bowl, cover with a towel, and let rise in a warm place for 1-2 hours or until doubled in size.

Baking
- Once risen, shape the dough into a rectangle and place on a greased baking sheet.
- Use your fingers to push dimples into the surface of the dough.
- Drizzle with olive oil, sprinkle with coarse sea salt and rosemary if desired.
- Bake for about 20-25 minutes until golden brown.
Notes
Store leftover focaccia in an airtight container at room temperature for up to 3 days, or wrap tightly and freeze for longer storage. Reheat in the oven until warmed through. Consider different toppings such as garlic, olives, or cheese for additional flavors.
