- In a large pan or wok, heat the vegetable oil over medium-high heat.
- Add the garlic and ginger, sautéing for about 30 seconds until fragrant.
- Add the chicken slices and cook until browned and cooked through, about 5-7 minutes.
- Add the mixed vegetables and stir-fry for another 3-4 minutes until they are tender-crisp.
- Stir in the soy sauce and chili paste, mixing well to coat the chicken and vegetables.
- Season with salt and pepper to taste.
- Serve hot over cooked rice or noodles.
Notes
For extra crunch, add a handful of cashews or peanuts when serving. Feel free to swap in your favorite vegetables, and increase chili paste for more heat.
