  • 2 cups mixed vegetables (bell peppers, broccoli, carrots) Fresh or frozen can be used.
Sauce Ingredients
  • 3 tablespoons soy sauce
  • 1 tablespoon chili paste Adjust amount for desired heat.
  • 1 teaspoon garlic, minced
  • 1 tablespoon ginger, minced
Cooking Ingredients
  • 2 tablespoons vegetable oil For cooking.

Method

  1. In a large pan or wok, heat the vegetable oil over medium-high heat.
  2. Add the garlic and ginger, sautéing for about 30 seconds until fragrant.
  3. Add the chicken slices and cook until browned and cooked through, about 5-7 minutes.
  4. Add the mixed vegetables and stir-fry for another 3-4 minutes until they are tender-crisp.
  5. Stir in the soy sauce and chili paste, mixing well to coat the chicken and vegetables.
  6. Season with salt and pepper to taste.
  7. Serve hot over cooked rice or noodles.

Notes

For extra crunch, add a handful of cashews or peanuts when serving. Feel free to swap in your favorite vegetables, and increase chili paste for more heat.
