Preparation
- Preheat your oven to 375°F (190°C) and prepare your working space by laying out the phyllo dough or puff pastry.
Filling and Rolling
- In a bowl, mix the crumbled feta cheese with the fresh herbs if you're using them.
- Take a sheet of phyllo dough or puff pastry and brush it lightly with melted butter or olive oil.
- Place a small amount of the feta mixture at one end and roll it up tightly.
- Moisten the edges with water or beaten egg to seal it.
Baking
- Place the rolled feta on a baking sheet lined with parchment paper.
- Brush the tops with more melted butter or olive oil.
- Bake in the preheated oven for about 20-25 minutes, or until the rolls are golden brown and crispy.
Finishing Touch
- While the rolls bake, prepare the spicy honey by gently warming the honey in a small pan and stirring in the chili flakes or hot sauce.
- Drizzle this over the hot feta rolls just before serving.
Notes
Keep the phyllo dough covered with a damp cloth to prevent it from drying out while you work. You can experiment with different types of cheese for varying flavors. Adjust the spice level in the honey based on your preferences.
