- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream the butter, granulated sugar, and powdered sugar until light and fluffy.
- Beat in the eggs one at a time, then mix in the vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet mixture.
- Add food coloring if using, then roll dough to ¼-inch thickness and cut into heart shapes.
- Bake for 6–9 minutes until set but not browned. Cool before serving or decorating.
Notes
For best results, avoid overbaking. Cookies should be just set and pale for a soft texture. Dough can be made ahead and refrigerated for up to 24 hours.
