  • 1 lb ground beef Can substitute with ground turkey or chicken
  • 1 packet taco seasoning
  • 2 cups tater tots Frozen tater tots are recommended
  • 2 cups shredded cheese Cheddar or Mexican blend
  • 1 can black beans Drained and rinsed
  • 1 can corn Drained
  • 1 cup salsa Use spicy salsa for extra heat
For serving
  • to taste Sour cream Optional, for serving
  • to taste Green onions Optional, for serving

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground beef over medium heat until browned. Stir in the taco seasoning and add black beans, corn, and salsa. Mix well.
  3. In a greased baking dish, layer the beef mixture evenly at the bottom.
  4. Top with tater tots, spreading them out in a single layer.
  5. Sprinkle the cheese on top of the tater tots.
Baking
  1. Bake in the preheated oven for 25-30 minutes, or until the tater tots are golden brown and the cheese is melted.
  2. Let it cool for a few minutes before serving.

Notes

Optional: Add additional ingredients like diced tomatoes, jalapeños, or bell peppers for extra flavor. Store leftovers in the refrigerator for up to 3-4 days.
