- Preheat the oven to 375°F (190°C). Melt butter in a large skillet over medium heat and sauté onion until soft. Add garlic and cook briefly.
- Stir in flour and cook for 1 minute. Slowly whisk in chicken broth and milk until smooth and thickened.
- Add chicken, vegetables, salt, pepper, and garlic powder. Simmer for 2–3 minutes, then transfer to a greased baking dish.
- Mix biscuit mix, milk, and cheddar cheese in a bowl. Spoon evenly over the filling.
- Bake uncovered for 30–35 minutes until biscuits are golden and filling is bubbly. Let rest before serving.
Notes
For best results, do not overmix the biscuit dough. Use rotisserie chicken for extra flavor and convenience.
