- Preheat oven to 400°F (200°C). Toss the mini potatoes with olive oil, salt, and black pepper. Spread on a baking sheet and roast for 40–45 minutes, until fork-tender.
- Let potatoes cool slightly, then slice each in half lengthwise. Scoop out a small portion of the center, leaving a sturdy shell.
- Brush the cut sides with remaining olive oil. Place cut-side down and bake for 15 minutes until crispy.
- Flip potatoes over, fill with cheddar cheese and turkey bacon. Bake for 5–7 minutes until cheese is melted.
- Top with sour cream and green onions. Serve warm.
Notes
For a vegetarian version, replace turkey bacon with sautéed or smoked mushrooms. Best served fresh for maximum crispiness.
