  • 1 cup Fresh spinach, finely chopped excess moisture removed
  • 1 large Egg
  • 2 tablespoons Almond flour
  • 1 tablespoon Olive oil
  • 1 teaspoon Dried oregano
  • 1 teaspoon Garlic powder
  • Black pepper to taste

Method
 

Instructions
  1. Preheat the oven to 190°C (375°F) and line a baking sheet with parchment paper.
  2. Finely chop the spinach and squeeze out excess moisture using a clean towel.
  3. In a bowl, mix feta cheese, spinach, egg, almond flour, olive oil, oregano, garlic powder, and black pepper until well combined.
  4. Spoon small portions onto the baking sheet and flatten slightly to form thin rounds.
  5. Bake for 12–15 minutes until golden and crisp around the edges.
  6. Let cool for 5 minutes before serving so the crisps firm up.

Notes

For extra crispiness, flatten the mixture thinly and avoid excess moisture in the spinach. Best enjoyed fresh or reheated briefly in the oven.
