- In a small bowl, mix peach preserves, soy sauce, apple cider vinegar, Dijon mustard, and minced garlic. Set aside.
- Season the chicken with salt, pepper, and chili powder on both sides.
- Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4–5 minutes per side until golden and nearly cooked through. Remove and set aside.
- In the same skillet, add jalapeño slices and peaches. Cook for 2–3 minutes until slightly softened.
- Pour in the peach sauce, stir, and let simmer for 1–2 minutes.
- Return the chicken to the skillet and coat with sauce. Simmer for 2–3 minutes until fully cooked and glazed. Serve warm.
Notes
Adjust jalapeño quantity to control heat level. Serve with rice, mashed potatoes, or steamed vegetables.
