- Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Slice the smoked turkey kielbasa and chop all vegetables into evenly sized pieces.
- In a mixing bowl, whisk together honey, soy sauce, minced garlic, and olive oil until smooth.
- Place sausage and vegetables on the prepared baking sheet. Pour the honey garlic sauce over everything and toss gently to coat evenly.
- Spread ingredients in a single layer and bake for 20–25 minutes, stirring halfway through, until vegetables are tender and lightly caramelized.
- Remove from oven and let rest for a few minutes before serving warm.
Notes
For a lighter version, substitute part of the honey with fresh lemon juice. You can also swap vegetables based on season. Serve over rice, quinoa, or enjoy as a low carb meal on its own.
