Ingredients
  

Chicken Salad Filling
  • 2 cups Cooked chicken breast, shredded
  • 1/2 cup Mayonnaise
  • 1 tablespoon Fresh lemon juice
  • 1/3 cup Celery, finely diced
  • 2 tablespoons Red onion, finely chopped
  • 1 teaspoon Dijon mustard optional
  • 1/4 teaspoon Salt or to taste
  • 1/4 teaspoon Black pepper or to taste
For Assembling
  • 4 Large flour tortillas
  • 4 large Lettuce leaves

Method
 

Instructions
  1. In a large mixing bowl, combine shredded chicken, mayonnaise, lemon juice, celery, and red onion.
  2. Add Dijon mustard if using, then season with salt and black pepper. Mix until well combined.
  3. Lay a tortilla flat and place a lettuce leaf in the center.
  4. Spoon about 1/2 cup of chicken salad mixture over the lettuce.
  5. Fold in the sides of the tortilla and roll tightly to form a wrap. Slice in half and serve.

Notes

For a lighter version, replace part or all of the mayonnaise with plain Greek yogurt. Store filling separately from tortillas and assemble just before serving to prevent sogginess.
