- In a large mixing bowl, combine shredded chicken, mayonnaise, lemon juice, celery, and red onion.
- Add Dijon mustard if using, then season with salt and black pepper. Mix until well combined.
- Lay a tortilla flat and place a lettuce leaf in the center.
- Spoon about 1/2 cup of chicken salad mixture over the lettuce.
- Fold in the sides of the tortilla and roll tightly to form a wrap. Slice in half and serve.
Notes
For a lighter version, replace part or all of the mayonnaise with plain Greek yogurt. Store filling separately from tortillas and assemble just before serving to prevent sogginess.
