Ingredients
  

Chicken Filling
  • 2 cups Cooked shredded chicken
  • 0.5 cup Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Salt or to taste
  • 0.25 teaspoon Black pepper
For Assembling
  • 12 Corn tortillas warmed
  • 1.5 cups Shredded cheese Mexican blend, cheddar, or Monterey Jack
  • 1 tablespoon Oil for brushing

Method
 

Instructions
  1. Heat a skillet over medium heat with a small amount of oil. Add the onion and cook until soft. Stir in the garlic and cook until fragrant.
  2. Add the shredded chicken, chili powder, cumin, paprika, salt, and black pepper. Stir well and cook for 2–3 minutes until heated through. Remove from heat.
  3. Warm the tortillas to make them flexible. Place chicken filling and shredded cheese in the center of each tortilla and roll tightly.
  4. Place taquitos seam-side down on a parchment-lined baking sheet. Lightly brush with oil.
  5. Bake at 400°F (200°C) for 20–25 minutes, turning halfway through, until golden and crispy. Serve warm with your favorite dips.

Notes

For extra crispiness, bake on a wire rack. These taquitos can also be air-fried at 375°F for 10–12 minutes.
