- Heat a skillet over medium heat with a small amount of oil. Add the onion and cook until soft. Stir in the garlic and cook until fragrant.
- Add the shredded chicken, chili powder, cumin, paprika, salt, and black pepper. Stir well and cook for 2–3 minutes until heated through. Remove from heat.
- Warm the tortillas to make them flexible. Place chicken filling and shredded cheese in the center of each tortilla and roll tightly.
- Place taquitos seam-side down on a parchment-lined baking sheet. Lightly brush with oil.
- Bake at 400°F (200°C) for 20–25 minutes, turning halfway through, until golden and crispy. Serve warm with your favorite dips.
Notes
For extra crispiness, bake on a wire rack. These taquitos can also be air-fried at 375°F for 10–12 minutes.
