Ingredients

Crostini Base
  • 1 loaf French baguette sliced into 1/2-inch pieces
  • 2 tablespoons Olive oil for brushing
Topping
  • 8 ounces Brie cheese sliced or cut into small pieces
  • 1 cup Cranberry sauce homemade or store-bought
  • 1 teaspoon Fresh rosemary or thyme finely chopped, optional

Equipment

  • Baking Sheet
  • Oven

Method

Instructions
  1. Preheat the oven to 375°F (190°C). Arrange the baguette slices on a baking sheet and brush both sides lightly with olive oil.
  2. Bake for 8 to 10 minutes, flipping once, until the bread is lightly golden and crisp. Remove from the oven.
  3. Place a piece of brie cheese on each toasted baguette slice. Return to the oven and bake for 5 to 7 minutes, just until the cheese softens and begins to melt.
  4. Remove from the oven and spoon cranberry sauce over the melted brie. Garnish with fresh herbs if desired and serve warm or at room temperature.

Notes

For best results, assemble just before serving so the crostini stay crisp. You can toast the bread ahead of time and store it in an airtight container until ready to use.
