  • 1 tbsp Olive oil
  • 1 lb Ground beef can substitute ground turkey
  • 1 medium Yellow onion diced
  • 3 cloves Garlic cloves minced
  • 1 packet Taco seasoning
  • 1 packet Ranch seasoning mix
  • 15 oz Diced tomatoes canned, undrained
  • 10 oz Tomatoes with green chilies canned, undrained
  • 15 oz Black beans drained and rinsed
  • 15 oz Pinto beans drained and rinsed
  • 15 oz Kidney beans drained and rinsed
  • 15 oz Corn drained
  • 3 cups Beef broth
  • 1 tsp Salt or to taste
  • 0.5 tsp Black pepper or to taste

Method
 

Instructions
  1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it up as it cooks.
  2. Add diced onion and cook until softened. Stir in garlic and cook for 30 seconds until fragrant.
  3. Drain excess grease, then stir in taco seasoning and ranch seasoning until well combined.
  4. Add diced tomatoes, tomatoes with green chilies, beans, corn, and beef broth. Stir to combine.
  5. Bring to a gentle boil, then reduce heat and simmer uncovered for 20 minutes, stirring occasionally.
  6. Season with salt and pepper to taste. Serve warm with optional toppings like cheese or sour cream.

Notes

This cowboy soup stores well and tastes even better the next day. Freeze leftovers for up to 3 months.
