  • 1 lb Ground beef
  • 1 medium Onion, chopped
  • 1 cup Bell peppers, chopped
Sauce and Topping
  • 10.5 oz Cream of mushroom soup low sodium if possible
  • 2 cups Shredded cheddar cheese divided
  • 32 oz Frozen tater tots do not thaw
  • 1 tsp Salt or to taste
  • 0.5 tsp Black pepper or to taste

Method
 

Instructions
  1. Preheat the oven to 375°F (190°C) and lightly grease a casserole dish.
  2. In a large skillet over medium heat, cook the ground beef until browned. Drain excess grease if needed.
  3. Add the chopped onion and bell peppers to the skillet and cook until softened. Season with salt and black pepper.
  4. Stir in the cream of mushroom soup until well combined, then remove from heat.
  5. Spread the beef mixture evenly into the prepared casserole dish and sprinkle with half of the shredded cheese.
  6. Arrange the frozen tater tots in a single layer on top.
  7. Bake uncovered for 35–40 minutes until the tater tots are crispy and golden.
  8. Sprinkle the remaining cheese over the casserole and return to the oven for 5 minutes, until melted.

Notes

For a lighter version, substitute ground turkey or chicken and use reduced-fat cheese. Do not thaw the tater tots before baking for best crispiness.
