Beef Filling
  • 1 lb Ground beef
  • 1 medium Onion, chopped
  • 2 cloves Garlic cloves, minced
  • 1 tbsp Cooking oil
Sauce and Layers
  • 2 cups Red enchilada sauce
  • 1 cup Tomato sauce or canned diced tomatoes
  • 1.5 tsp Chili powder
  • 1 tsp Ground cumin
  • 0.5 tsp Salt or to taste
  • 0.25 tsp Black pepper or to taste
  • 10 pieces Corn tortillas
  • 2.5 cups Shredded cheese cheddar or Mexican blend

Method
 

Instructions
  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Heat oil in a large skillet over medium heat. Cook onion until soft, then add garlic and ground beef. Cook until beef is browned.
  3. Stir in chili powder, cumin, salt, pepper, enchilada sauce, and tomato sauce. Simmer for 5–7 minutes.
  4. Layer tortillas, beef mixture, and cheese in the baking dish. Repeat layers and finish with cheese on top.
  5. Cover with foil and bake for 20 minutes. Uncover and bake another 10–15 minutes until bubbly.
  6. Let rest for 5–10 minutes before slicing and serving.

Notes

This beef enchilada casserole can be prepared ahead and refrigerated before baking. Ground turkey or chicken can be used instead of beef.
