Preparation
- Preheat the oven to 350°F (175°C).
- Grease a muffin tin with olive oil.
- In a bowl, whisk together the egg whites, salt, and pepper.
- Add in chopped veggies and cheese.
- Pour the mixture into the muffin tin, filling each cup about 3/4 full.
Baking
- Bake for 20-25 minutes or until set and slightly golden on top.
- Let cool slightly before removing from the tin. Serve warm.
Notes
These bites can also be chilled and pair well with salsa or avocado. Store in the fridge for up to a week, or freeze for up to three months. Reheat before serving.
