- In a large skillet or wok, heat the butter over medium heat.
- Add the diced Spam and cook until slightly crispy.
- Push the Spam to one side of the skillet and pour the beaten eggs into the other side, scrambling them until fully cooked.
- Add the cooked rice, green peas, carrots, and corn to the skillet.
- Pour the soy sauce over the mixture and stir everything together.
- Season with salt and pepper to taste.
- Cook for an additional 5 minutes, stirring occasionally.
- Garnish with green onions if desired and serve hot.
Notes
