Ingredients
  

Main Ingredients
  • 2 cups cooked rice Use day-old rice for the best texture.
  • 1 can Spam (diced)
  • 2 large eggs (beaten)
  • 1 cup green peas Frozen works perfectly.
  • 1 cup diced carrots Feel free to use frozen.
  • 1 cup corn Fresh or frozen works well.
Seasoning and Garnish
  • 3 tablespoons soy sauce Adjust to taste.
  • 2 tablespoons butter For frying.
  • to taste Salt and pepper
  • as desired Green onions for garnish Optional.

Method
 

Cooking
  1. In a large skillet or wok, heat the butter over medium heat.
  2. Add the diced Spam and cook until slightly crispy.
  3. Push the Spam to one side of the skillet and pour the beaten eggs into the other side, scrambling them until fully cooked.
  4. Add the cooked rice, green peas, carrots, and corn to the skillet.
  5. Pour the soy sauce over the mixture and stir everything together.
  6. Season with salt and pepper to taste.
  7. Cook for an additional 5 minutes, stirring occasionally.
  8. Garnish with green onions if desired and serve hot.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat thoroughly before serving. You can modify the recipe by using different proteins or additional vegetables.
