- In a large bowl, mix the shredded chicken, honey, minced chipotle peppers, garlic powder, and onion powder until well combined.
- Heat the olive oil in a skillet over medium heat.
Cooking
- Place a corn tortilla in the skillet. Add a generous amount of the chicken mixture on one side and top it with cheese.
- Fold the tortilla in half and fry until golden and crispy, about 3-4 minutes on each side.
- Repeat with the remaining tortillas and filling.
- Once done, remove the tacos from the skillet and let them cool slightly.
Serving
- Top the tacos with chopped cilantro and diced red onion before serving.
- Serve warm and enjoy with your favorite sides.
Notes
For extra crunch, you can bake the tacos in the oven at 400°F (200°C) for about 10-15 minutes after frying. Experiment with different types of cheese or add more spices to the chicken mixture for unique flavor. These tacos can be made vegetarian with black beans or lentils as a substitute for chicken.
