  • 4 pieces boneless, skinless chicken breasts Pound to even thickness for even cooking.
  • 1 cup almond flour Can mix with panko for extra crunch.
  • 1 cup grated Parmesan cheese Can substitute with Pecorino Romano.
  • 2 large eggs Whisked for coating.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • to taste seasoning salt and pepper
  • as needed tablespoons Olive oil for frying
  • as needed cup Marinara sauce For serving.
  • as needed pieces Fresh basil For garnish.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk the eggs.
  3. In another bowl, combine almond flour, Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper.
Cooking
  1. Dip each chicken breast in the eggs, then coat with the almond flour mixture, pressing gently to adhere.
  2. Heat olive oil in a frying pan over medium heat.
  3. Add the chicken breasts and cook until golden brown on each side, about 3-4 minutes per side.
  4. Place the chicken on a baking sheet and bake for 15-20 minutes until cooked through.
Serving
  1. Serve with marinara sauce and garnish with fresh basil.
  2. Optionally, serve with a side of spaghetti or salad.

Notes

To store leftovers, place in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to regain crispy texture. For variations, consider adding mozzarella cheese during the last few minutes of baking or spices like paprika for extra heat.
