  1. Cook the gnocchi according to package instructions until they float to the surface. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the garlic and sauté until fragrant, about 1 minute.
  3. Add the spinach, cooking until it wilts.
  4. Pour in the heavy cream and bring to a simmer. Add the feta cheese, mixing until it melts and the sauce becomes creamy.
  5. Add the cooked gnocchi to the skillet, tossing to combine with the sauce. Season with salt and pepper to taste.
  6. Serve hot, topped with grated Parmesan cheese if desired.

Notes

For the best experience, serve this dish warm right after cooking. Store leftovers in an airtight container in the refrigerator for up to 3 days, reheating on low heat and adding a splash of cream or water. Fresh spinach works best, but you can substitute with frozen if necessary.
