  • 2 pieces boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups ramen noodles
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1 cup mixed fresh vegetables (e.g., bell peppers, spinach, carrots) Use your favorite mix.
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil

  1. In a large pot, heat olive oil over medium heat. Season the chicken breasts with salt and pepper, and cook until browned and cooked through, about 6-8 minutes per side. Remove from the pot and set aside.
  2. In the same pot, add minced garlic and sauté for about 1 minute until fragrant.
  3. Pour in the chicken broth and bring to a boil. Add the ramen noodles and fresh vegetables, cooking until the noodles are tender, about 3-4 minutes.
  4. Stir in the heavy cream and soy sauce, mixing well to create a creamy sauce.
  5. Slice the cooked chicken and add it back to the pot, stirring to combine.
  6. Serve hot, garnished with chopped green onions.

Notes

For a vegetarian option, swap the chicken for tofu and use vegetable broth instead of chicken broth. You can also add extra beans for protein. Store in an airtight container for up to 3 days.
