- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
- Add minced garlic and sauté for another minute.
- Stir in the fresh spinach and cook until wilted.
- Remove from heat and stir in the Greek yogurt, mixing well.
- Combine the chicken mixture with the cooked pasta, and season with salt and pepper to taste.
- Serve warm, topped with grated Parmesan cheese if desired.
Notes
Store in an airtight container in the refrigerator for up to 3 days. Do not freeze if cooked with yogurt, as the texture may change.
