Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup orange juice
  • 1/4 cup vegetable oil
  • 1 large egg
  • Zest of 1 orange orange zest
Add-ins
  • 1 cup fresh cranberries, chopped

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix together the orange juice, oil, egg, and orange zest.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped cranberries.
  5. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Cranberry Orange Bread can be served warm or at room temperature. Store it wrapped tightly in plastic wrap or aluminum foil at room temperature for a couple of days. For longer storage, freeze it in an airtight container.
