- Preheat the oven to 375°F (190°C) and lightly grease a baking dish. Pat the chicken breasts dry and cut a deep pocket into the side of each one.
- Season the chicken inside and out with salt, pepper, and dried thyme. Stuff each breast with Brie cheese and dried cranberries.
- Place the stuffed chicken in the baking dish, drizzle with olive oil, and sprinkle with minced garlic.
- Bake uncovered for 25–30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). Let rest for 5 minutes before serving.
Notes
Secure the chicken with toothpicks if needed to keep the filling inside. Serve with roasted vegetables, mashed potatoes, or a fresh green salad.
