  • 4 Boneless skinless chicken breasts
  • 8 oz Brie cheese cut into slices
  • 0.5 cup Dried cranberries

Method
 

Instructions
  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish. Pat the chicken breasts dry and cut a deep pocket into the side of each one.
  2. Season the chicken inside and out with salt, pepper, and dried thyme. Stuff each breast with Brie cheese and dried cranberries.
  3. Place the stuffed chicken in the baking dish, drizzle with olive oil, and sprinkle with minced garlic.
  4. Bake uncovered for 25–30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). Let rest for 5 minutes before serving.

Notes

Secure the chicken with toothpicks if needed to keep the filling inside. Serve with roasted vegetables, mashed potatoes, or a fresh green salad.
